Diploma in Culinary Arts (DCA)

DURATION:  1 YEAR

INTRODUCTION:

The course is designed with a practice-oriented approach that helps the students to understand the Food Dishes at an advanced and professional level and make their skills more vibrant as well as industry-ready. Experienced trainers, industry experts and professionals will collaboratively deliver the course in a mix of theory, practical, workshops and assignments in order to provide an industry oriented strong foundation to professional Chefs.

COURSE OBJECTIVES:

Culinary Arts course will make the Chefs understand the Hotel Industry in depth to help them find their place in the Industry. It focuses on preparation and the artistic presentation of food items.  Students will be involved in preparation steps ranging from meal planning to adding the last garnishing touch. Skills in food decoration and plating will be introduced and developed.

SPECIAL TRAINING/ PROJECT DURING THE COURSE:

Practical/ Productions offered-

Three days in a week practical classes of Food production and Bakery & Confectionary.

  • Food Production Practical – European, Western and Oriental Cuisine Preparations (Soup, Salads, Hors d’oeuvres, Canapé, Main course, Desserts, etc.).
  • Bakery & Confectionary Practical - Different types of breads, cookies, Cakes, Pastries, Hot and cold desserts preparations.

COURSE OUTCOME:

On completion of this program:

  • Students will have knowledge and understanding the techniques and skills necessary for the preparation and service of quality foods in a professional setting.
  • They will be able to demonstrate the abilities to convert recipe quantities, use standard weights and measures correctly and to write and follow standard recipe procedures.
  • They will be aware of the many career possibilities in the Culinary, Baking & Hospitality field and develop the skills necessary for the employment.
